Grape/Blend: Dolcetto & Riesling Renano (Grapes collected from different parcels on the low side of the hills, where the soil is cooler and preserves the freshness of the wine)
Wine-making Process: Direct pressing of the grapes. The first fermentation takes place in French oak barriques for ten days at a temperature of 15-18°C. The second fermentation takes place in the bottle at around 14°C. Maturation on its lees for 12 months, with rémuage done by hand in pupitres. No added syrup dosage.
Tasting Notes: Gold color, rapid foam and a fine and persistent perlage. It has aromas of bread crust, yeast and dried fruit with some floral notes.
